Uniquely, these anchovies are not packed tightly to the brim with fish. This is a trademark of Basque brand Olasagasti, who feel that using a larger tin gives the anchovies space to move and become covered in the marinade of olive oil, garlic, cayenne, wine vinegar and salt. Since 2011, Linda from Rancho DelSol has been vocal as to her requited love (they are prolific) of the Kishu Mandarin. The honorable David Karp calls this fruit, “the most delicious of mandarins,” and I encourage you all to find yourself a thinly skinned, juice-ladened Kishu and savor as many of them as you can…next January 2023. Until then, there’s this wonderful preserved version. I have only used this fruit for juice and dehydrated decoration as its thin skin has made only a rare marmalade appearance. Yet, after seeing Culture Pickle Shop in Berkeley salt ferment the Kishu a few years back, it's been in the back of my mind to give this citrus a whirl with a similar method to how we salt ferment our yuzu and Meyers. We sell our Meyers and Yuzu just in their natural, puree form - perfect with fish, brassicas and rice - a little going a long way in citrus notes and as a salt replacement. We wanted to see what would happen if we married the Kishu with our Jalapeño ferment (what we use for our hot sauce). The result is something similar in color to a Yuzu Kosho (Japanese yuzu pepper paste), yet it has a softer texture as we do not strain out the gut healthy liquid - meaning it can be mixed into a rice or vegetables with ease or added into a sauce as a layering ingredient. It's FANTASTIC!!

Fruit remains pear-focused, like the aroma, but an unexpected green grape character sneaks in and shakes things up. Indigenous people are responsible for more than half of the coffee production operations in Mexico. Promoting the coffee that comes from these small communities means supporting and strengthening their economic growth, and their collective power as producers. · Buna is a Mexican coffee company that works directly with indigenous, family-run operations. They are known for being closely involved with all parts of the process, from bean to brew. For this bar, Cuna de Piedra uses their Dalia blend, which features rich caramel notes that complement their Comalcalco, Tabasco 73%. On Malaquías’ finca, several hundred cacaotrees coexist with wild black pepper vines and various citrus species. Cuna de Piedra is proud to work closely with them to ensure fair wages and ongoing sustainable harvesting.

Blenheim’s hail from Europe about 200 years ago, flourishing in the garden at Blenheim Palace in England (birthplace of Winston Churchill!); they became U.S. imports in the 1880’s, arriving in California and spiking in production during WWI until a halting of imported dried fruit from Europe mobilized Sacramento and Santa Clara valleys to begin growing hefty amounts of them. Today, Blenheim production is quickly decreasing by the thousands do to the uprooting oftrees to make room for commercial development; additionally, due to their minuscule shelf life, major chain grocery stores more than often opt for the more shelf-stable varietals of apricots.

2021 Pride Red Blend Tara is credited as the first known commercial Native American winemaker of only a handful in the world. She and her wife, Mireia (a Cataluynian winemaker), started Camins to focus on winemaking in the Sta Rita Hills. 'Camins' means 'Path' in Mireia's native Catalan and references how the two met and have now fulfilled their dreams of making wine in Tara's ancestral homeland. Fun fact: the Oak tree on the label represents a sacred symbol to the Chumash peoples, and grows in vineyards in both the Santa Ynez Valley and in Spain, while the Yin + Yang inspired circle represents their different backgrounds. Much of the proceeds were donated by the maker to LGBTQ organizations in their community.

The appellation, “Coteaux Champenois”, covers still wines in the Champagne zone of production. The Côtes de Bar has a long tradition of producing still wines and Bernard Dumont is doing some amazing things as he brings forward his family’s tradition. The Coteaux Champenois Rouge is produced from a single parcel named “La Voie de Chanay” which rises to 396 meters in altitude (the highest in Champagne) and is planted with massale Pinot Noir clones. The grapes for the Coteaux Champenois are harvested late and are fermented as whole clusters in stainless steel. The wine is kept “sur lies” for 10 months before being bottled without filtration. No SO2 is added throughout the process. The production is quite small.
Altesse from the Marestel vineyard within the wine region of Savoie, France. Dupasquier is a fifth generation Domaine that makes killer Altesse wines. This particular vineyard is high in elevation and offers a ripe, honeyed, floral, and nutty expression of the grape with beautiful age-ability. The "Rolls-Royce" of Apple Juice from Basse-Normandie, France. Jus de Pomme Pétillant (Sparkling Apple Juice) is 100% natural apple juice, without added sugar, preservative or colouring. It is a healthy elegant drink, for young and less young alike. The apples are simply mixed, crushed and pressed, slowly and delicately so that the juice retains all the flavour and goodness of the apple. The juice is then clarified, pasteurised and carbonated. No sugar is added.
After a short maceration, the Pineau d'Aunis is blended with Cabernet Franc free-run juice. Aging continues in vats for six months. Notes of fresh red fruits and spices. The palate is supple, light and finely tannic. Serve a little chilled.

Planted in 1972, Shell Creek Vineyard is among the first vineyards planted in San Luis Obispo County. This remote vineyard of the Paso Robles Highlands District sits beneath limestone cliffs featuring marine fossils after which the vineyard was named. We are fortunate to make wine from these special old vines! This wine showcases a diverse breadth of Chenin aromatics, balancing both opulence and freshness on the nose and palate. Valdiguié (aka 'Napa Gamay'), is somewhat of a California heritage grape that was planted in the 90s at Shell Creek. It ripens at low alcohols and produces large berries and clusters. We ferment this wine using carbonic maceration—leaving the whole clusters undisturbed for a full 10 days—resulting in a bright, light, and juicy wine, best enjoyed with a slight chill. Tasting notes: macerated strawberries, fresh cherries, rhubarb, watermelon jolly rancher

True to the motto “Rosé for everyone”, the Rosé King is a cuvée for every occasion: it is inviting and stimulating, puts you in a good mood and looks great on the terrace, on the beach and with food. The Rosé König consists of Blaufränkisch, Zweigelt and St. Laurent grapes, which were hand-picked from specially cultivated vineyards on the right bank of Lake Neusiedl. The meteorological conditions in 2023 were as exciting as ever. The spring was fortunately rainy, the summer was sometimes changeable and often hot, but without breaking any records. The harvest then took place in mostly sunny weather and generally ideal conditions. All in all, we think 2023 was a very good vintage for both red and white grapes.

This is a soaring wine, with an expansive and buoyant perfumed and aromatic nose driven largely by the Musaris, which smells like a flower shop after a rainstorm. For all this taut opulence, the palate is crisp and straight, finely layered with citrus and stone fruit, plenty of green oily herbs and refreshing minerals. Easy to love.
